In June 2000, 3 Tomatoes & a Mozzarella began when Nancy and Jeff Roskin recognized the need for a real Tuscan-inspired restaurant. They made their own. "We decided to open up because the pizza here was disgusting," says Nancy, a straight-talking East Coaster who worked as a paralegal and an interior designer before turning into a restaurateur. "The food overall was great, but the pizza wasn't any good at all. The area needed a good pizza restaurant."
The state of the pizza industry is strong. According to a Technomic study, 83% of consumers eat pizza at least once per month. According to PMQ's 2018 Industry Census, 60.47% of respondents reported an increase in sales over the previous year. Internationally, pizzerias are thriving, with a five-year forecasted growth rate of 10.7%
